This mold is used in Antonio Bachour's new book: Bachour Buffets to make the Chocolate brioche and the Tropical babá from the croissant & brioche chapter. You can use it to apply Antonio Bachour's recipes or create your own versions.
This mould can be either hand-washed or put in the dishwasher. Please, pay attention to use odourless cleansers with a neutral pH (pH 7) but lacking in aggressive agents (polishing, de-greasing and shining ones). It is suggested to wash the mould regularly and not to use abrasive products in order to grant a longer duration of the material. Furthermore, it is suggested to put moulds in the oven at 150°C after being washed for a perfect hygiene.
