Arte Heladero 214 - IV/2023
Cities around the world such as Yamato, Los Angeles, Auckland, Buenos Aires and Miami, are the setting in which an important part of Arte Heladero 214's collaborators move. And the desire to surprise you with new high-quality content has led us again to pack our bags to move to workshops where really interesting things are happening. Mercedes Román, shows us her renewed way of working with fruit and the concept of an ice cream parlor that breaks the mold in Buenos Aires, Obrador Florida.
She is accompanied in this issue by new collaborators such as Sabrina Mancin, Ingrid Serra, Christian González and Martín Lippo, with an article that thoroughly reviews new techniques in frozen chocolates with semi-liquid interiors, Hiroyuki Emori, with new frozen cakes, José Manuel Miquel, with a technical article on carob, and Giapo, who explains his new project on wheels in Los Angeles, in collaboration with Cher.
