Over more than 270 pages, this careful book goes in depth into the seven intense years of Albert Adrià’s famous restaurant Tickets, whose evolution has been unstoppable, and which ended up surpassing even the concept of a creative tapas bar with which it was born. In total, this work includes the detailed recipe of nearly 100 dishes that have marked each year in the life of the Barcelona establishment born in 2011, the seed of elBarri group. Albert Adrià uses these pages to delve into the creative process and the evolution of the dishes and to reflect on the present, past, and future of his cuisine.
Carefully edited, Tickets Evolution focuses on the 2014, 2015, 2016, and 2017 dishes in a special way. It also has a special section for basic recipes and to shed light on some of the most interesting processes step-by-step.
