Après Fruits et Opéra, je souhaitais rendre hommage à ma maman, elle qui me disait qu'avec une simple fleur on peut conquérir le monde. Pour moi, il n'y a pas plus élégant que le pochage d'une fleur. Pocher une crème, une ganache ou une meringue permet de donner un équilibre esthétique et gustatif à un dessert. En formant des courbes, des volutes et des pétales, je cherche à dessiner une fleur à chaque fois différente, pour transformer un simple gâteau en cadeau. Les fleurs sont un terrain de jeu infini pour un pâtissier. Symbole de vie, d'élégance et de pureté, elles permettent de jouer sur les couleurs, les formes et les ingrédients. Elles sont extrêmement inspirantes, et j'avais envie de les rendre comestibles !
